Hearty Whole Wheat & Sweet Banana Bread     

Although this banana bread tastes sweet, you don’t have to worry about gaining extra calories and sugar from enjoying this since healthy whole wheat flour (more wheat bread recipes) and oats make up most of this banana bread. We all know that whole wheat flour contains more healthy fiber and fewer calories than the regular flours. So what makes this banana bread creative and unique? Well, it has a nice and slightly crunchy topping that’s made of rolled oats, brown sugar and chopped pieces of banana. The topping adds a new dimension and multiplies the flavors of this banana bread. It’s fluffy, dense, sweet and rich with flavors . You’ll love the uniqueness  for sure. Ingredients:

Topping:
  • 1/2 banana, chopped
  •  1/2 C. rolled oats (not quick-cooking or instant)
  • 1/4 C. light brown sugar
Bread:
  •  1 C. whole wheat flour
  •  1 C. all-purpose flour
  •  1/2 C. light brown sugar
  •  2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 ripe medium bananas
  •  2 eggs, lightly beaten
  • 1 C. low-fat buttermilk
  • 1 Tbs. canola oil

Preparation:

Preheat the oven to 375 degrees F. Prepare a 9x5x2 1/2 in. loaf pan by coating it lightly with cooking spray.

 In small mixing bowl, make the topping by mixing together banana, rolled oats and brown sugar. Set aside topping. 

In large mixing bowl, stir together whole wheat flour, all-purpose flour, remaining brown sugar, baking powder and salt. Whisk well to combine.

 In a medium-sized bowl, mash bananas thoroughly. Beat in eggs, buttermilk and oil. 

Pour wet ingredients into the bowl of dry ingredients, stirring batter just until combined. Pour this into prepared loaf pan. Spread the topping evenly over the batter. 

Bake in preheated oven until knife or toothpick inserted into the center of the loaf comes out clean. This would usually take 45 to 50 minutes.

Let freshly baked loaf cool in loaf pan for 10 minutes. Remove from pan and transfer onto baking rack to cool completely. Slice and serve, or wrap in foil and use later.

Apple Butter Banana Bread

Ingredients:
  • 1 1/2 C. all purpose flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1/8 tsp. ground nutmeg
  • 2 slightly beaten eggs
  • 3/4 C. sugar (can be reduced to 1/2 C. for diet restrictions)
  • 2 medium overripe bananas, mashed
  • 1/2 C. spiced apple butter
  • 1/4 C. canola oil
  • 1/2 C. chopped nuts (optional)
Preparation:

Prepare one 9x5x3 inch loaf pan by greasing it with cooking spray and coating bottom and sides with flour. Set aside.

In a large bowl, stir together flour, baking powder, salt, cinnamon, baking soda, and nutmeg. Make a hollow depression in center of the mixture. Set aside.

In a medium-sized bowl, beat eggs together with sugar, banana, apple butter, and oil. Pour egg mixture all at once into flour mixture. Whisk just until moistened but make sure not to over mix. Batter should be lumpy. If desired, fold in chopped nuts. Pour batter into the greased and floured loaf pan.

Bake in the oven at 350 degrees F for about 45 minutes or until a toothpick or knife inserted in the center loaf comes out clean. Place loaf pan on wire rack for 10 minutes. Remove bread from pan, and cool completely on wire rack. Tightly wrap or cover with foil or plastic wrap, and store in refrigerator overnight before slicing. 

Slice and serve!
